I like to always use a honey local to my area. You can use any honey you prefer.
I keep the leftover infusion in a glass jar in the fridge because I make these often. No need to waste it, just save it!
***Small update to this recipe: I found that no matter how much arrowroot flour I add it still sticks so much to the parchment paper. I tried it with coating coconut oil all over the dish I set it in, works so much better! I used a coconut spray and coated the bottom and the sides. Once it set in the fridge, I ran a spatula around the sides, and it drops out perfectly. Still dust with the arrowroot powder on both sides so that they don’t stick to each other.
